Walnut Streusel Bread

A light, moist, and perfectly sweetened quick bread with a walnut streusel that’s perfect with coffee for breakfast or as dessert. Adapted from Cooking Light 10/12



For the Streusel

  1. 1/3 cup Coconut Sugar
  2. 1/3 cup Old-Fashioned Rolled Oats
  3. 1/2 Tbs Cinnamon
  4. pinch of salt

For the Bread

  1. 9 oz All Purpose Flour
  2. 1/2 tsp Baking Powder
  3. 1/2 tsp Baking Soda
  4. 1/2 tsp Salt
  5. 5 TBS Butter, softened
  6. 1/3 cup Truvia Baking Blend, or other sugar substitute
  7. 3 Large Eggs
  8. 1 tsp Vanilla Extract
  9. 1 cup Buttermilk


  1. Preheat the oven to 350 degrees. Line a 9.5″ x 5″ loaf pan with parchment paper or spray with nonstick baker’s spray like Baker’s Joy.

  2. Combine flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
  3. Mix the sweetener with softened butter and whisk until well combined. Add eggs, one at a time, until thoroughly combined then add vanilla extract.
  4. Add the buttermilk and dry ingredients into the butter and egg mixture, alternating between the two starting with the dry ingredients.
  5. Pour half of the bread batter into the loaf pan. Sprinkle with half of the streusel mixture then pour in the remaining half of the batter. Add the last of the streusel on top.
  6. Bake for about 50 minutes. When the walnut streusel bread is done, a toothpick will come out with moist crumbs on it when inserted into the center of the loaf.
  7. Let cool for at least 10 minutes in the pan before removing and cooling on a baking rack.


If you would like to use sugar instead of a sugar free alternative just use ⅔ cup of white granulated sugar.
