Insanely Fluffy Omelette

The most insanely fluffy omelette you will ever eat.



  1. 3 eggs
  2. 1/8 tsp cream of tartar, optional
  3. 1/2 tbs unsalted butter
  4. 1/41/2 cup shredded cheese
  5. your desired fillings, I like sautéed vegetables and sausage


  1. Preheat your oven to 350 degrees.
  2. Separate egg whites from yolks in separate bowls.
  3. Add cream of tartar to egg whites if desired (see note) and whip egg whites until they develop stiff peaks.
  4. Add salt and pepper to egg yolks and fold into egg whites, being careful not to deflate the egg whites.
  5. On medium heat, melt butter in a skillet. Spread egg mixture into skillet and sprinkle with cheese.
  6. Bake for 12-15 minutes, depending on your oven. Fill with veggies, meats, or more cheese if desired.


If you don’t feel comfortable folding in the egg whites I suggest adding the cream of tartar. This will help keep the egg whites from falling.

When making a small amount of eggs I found it best to whip the egg whites in a small, high bowl. Otherwise I just wasn’t able to get them as stiff as they needed to be.
