This roasted green beans recipe has really changed how I look at green beans.
I’ve always had a strained relationship with green beans. One week I love and am absolutely obsessed with them. The next week, I wouldn’t eat them if they were the last thing in the fridge.
With this simple roasted green beans recipe though, I think our tumultuous relationship is finally over.
If I’ve said it once I’ve said it 50 times, roasted vegetables are the best kind of vegetables. Unless we’re talking about lettuce or some other leafy green, roasting is always a delicious way to go.
Not to say that sautéing or steaming is bad but roasting really concentrates the flavor of whatever you put in the oven and these green beans are no exception to that.
Now we couldn’t have these crisp green beans showing up to the party all by themselves now can we?
No. No we can’t.
Mushrooms are always welcome here and since I had shiitakes on hand, I went with those. I am super curious to try this recipe with oyster mushrooms or another variety though.
I went with shallots instead of onions since shallots have a sweeter, more mild flavor. And since garlic is bae, you already know he invited.
Now that our veggies are all present and accounted for lets talk about our seasonings. If you want to keep things simple, some kosher salt and cracked black pepper will work just fine here. In my opinion, green beans need a lot of salt so don’t be scared to get a little heavy handed here.
Take these green beans up a notch…
Herbes de Provence is a blend of spices that goes amazing well on pretty much everything I’ve ever tried it on. Chicken, pork, vegetables, pasta, you name it. Made up of a mixture of fennel, lavender, bay leaf, thyme and other earthy spices, this blend is a true game changer.
It used to be hard to find but I have been able to find it locally at stores like Harris Teeter and Publix but I first picked it up at Marshall’s in their gourmet food section.
I’m forever finding amazing stuff there…
Anywho, whether you keep it simple or you decide to spice these green beans up with your own flair I guarantee they’ll be a huge hit wherever they go. Looking for something with an Asian flair? Try the Hoisin Sriracha Green Beans.
- 1 lb Fresh Green Beans, washed, with stems clipped
- 4 oz Shiitake Mushroom, sliced
- 1 small Shallot, sliced
- 3-4 cloves Garlic, sliced
- 1 1/2 Tbs Oil, Olive, coconut, avocado
- 1/2 Tbs Fish sauce, or Worcestershire sauce
- salt & pepper to taste
- 1 tsp Herbes De Provence
- Preheat your oven to 400 degrees.
- In a bowl, combine all the ingredients together and toss to combine. Be sure to coat the vegetables evenly with seasoning and oil.
- Spread in a single layer on a baking sheet and roast in the oven for 20-25 minutes, depending on your desired level of doneness.
